Hailing from Jerusalem, a country mile from Avondale, Ilya was born with milk in his veins. The Collective's #1 Cheesemaker is pretty plain and simple when it comes to making champion cheeses... "It's like looking after 100 babies," he grins. "You turn them, touch them softly, smile at them." Quite frankly words fail us when it comes to even attempting to describe the deliciousness of his cheeses.

So we think our pedigrees speak for themselves.
